Thursday was Thanksgiving in the United States. My plan was to actually make a nice Thanksgiving post, but I am still recovering from all of my ailments. It’s still hard for me to take deep breaths. After effects of pneumonia.

Overall, I had a great holiday. As always, I am thankful for family, friends, and health.

This year, I made the traditional feast. We had roasted turkey, macaroni and cheese, mashed potatoes, giblet gravy, cranberry sauce, rosemary rolls, and cornbread dressing. Notice, no vegetables that aren’t starch. HA! Not exactly the best meal for a diabetic, but we can treat ourselves once in a while.

Normally, I take pictures of the entire process, but I didn’t have the energy. Instead, I grace you with the finished product. Yes, I eat on lunch trays because I don’t like my food to touch. It isn’t a debilitating thing, but it does make me anxious. I was able to allow my turkey/cranberry to touch my dressing. No, that isn’t alcohol. It’s non-alcoholic juice.

We then played some board games with my son. We played Here to Slay and Happy Little Dinosaurs.

On Saturday, we decided to brave the crowds at Home Depot to buy a new inflatable for our Christmas decorations.

Overall, it was a great holiday weekend. I wish I had the energy to document the weekend better, but it was really surprising I was able to churn out the yearly meal.

Anyhow, I hope you all had a wonderful Thanksgiving holiday. Now, to power through to the Christmas holiday!
