Tater Tots. Sausage. Bell peppers. Eggs. Lots of cheese. What is there not to love? I am always skeptical of breakfast casseroles. For some reason, they creep me out. Maybe because they’re always dry and too eggy. Who knew cheese was the key?!

Ingredients:
- 1 package of Jimmy Dean’s hot sausage
- 1 medium yellow onion, chopped
- 4 large eggs
- 1 cup whole milk
- 1/2 cup half-and-half
- 1/4 tsp. Lawry’s
- 1/4 tsp. cayenne pepper
- 1 red bell pepper, seeded and finely diced
- 1 green bell pepper, seeded and finely diced
- 2 cups grated cheddar cheese
- 1 cup grated pepper jack cheese
- Salt and pepper
- Butter, for baking dish
- One 16 oz. bag of frozen tater tots
Instructions:
Preheat oven to 350 degrees F.
Cook sausage and chopped onion in a skillet. Set aside when done.

In a large mixing bowl, add eggs, milk, half-and-half, Lawry’s, and cayenne. Whisk until combined.
Mix in bell peppers, half of both cheeses, and a pinch of salt and pepper into the egg mixture. Set aside.

Butter 9×13 baking dish. Line the baking dish with the frozen tater tots.
Place the sausage mixture on top of the tater tots and spread out evenly.
Pour the egg mixture over the sausage and spread out evenly.

Top with the rest of the cheese.
Cover dish with foil and bake at 350 degrees for 25 minutes.
Remove the foil from the dish and continue to bake another 25 minutes.

Thoughts:
We absolutely loved it. It wasn’t dry! There is so much cheese, it keeps the casserole moist. In addition, the casserole didn’t taste like overcooked eggs. You could tell the eggs are there, but the taste of the bell peppers and onions really come through. If you don’t like bell peppers and onions, you might want to skip this recipe. We will definitely keep this recipe for future meals.
