I got this new shibuki cooking pot. It’s super cool. It’s an electric pot that you can cook your lunch in.

Anyhow, I was cooking chunks of chicken breast in it when my co-worker entered the kitchen to brew coffee. He asked me what I was cooking. Then, he mentioned something called “marry me chicken.” I had never heard of it, but he told me it was a Pioneer Woman recipe and it was good. So, of course I had to give it a try.

Ingredients
- Thinly-sliced chicken breasts x 6-8 pieces
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 6 tablespoons salted butter, divided
- 2 tablespoons vegetable oil, divided
- 1/2 small yellow onion, finely diced
- 4 garlic cloves, minced
- 1/4 tsp. crushed red petter
- 2 tablespoons tomato paste
- 1/2 cup Pinot Grigio
- 2 cups chicken broth
- 2/3 cup dry-packed sun-dried tomatoes, sliced
- 1/2 tsp. Italian seasoning
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan
Instructions

Gather and pre-measure your ingredients. You can either purchase pre-sliced thin-cut chicken breasts (like I did), or slice 4 chicken breasts in half.
Using the flour, lightly cover your chicken breasts. Make sure to remove any excess so it doesn’t burn in your pan. Place in a plate and set aside.
Heat up your pan with 1 tablespoon vegetable oil and 2 tablespoons butter. Place 2-3 pieces of chicken in the pan and cook until golden brown on both sides. Add 1 tablespoon vegetable oil and 2 tablespoons butter to the pan and fry the remaining chicken pieces. Place in a plate and set aside.

In the same skillet, melt the remaining 2 tablespoons of butter. Add onion and sauté for 1 minute or until translucent. Add garlic, red pepper, and tomato paste. Cook for 1 minute. Pour in wine. Let it reduce to half.
Add chicken stock, sun-dried tomatoes, and Italian seasoning.

Bring to a simmer. Once at a simmer, add the chicken pack into the pan and cook until the sauce has thickened slightly. Add the cream and parmesan and let simmer for 5-10 minutes.

Serve with mashed potatoes or pasta. Top with extra parmesan and some chopped parsley if you want to be extra.

Thoughts
The family loved it. It made my house smell so good. I don’t quite think it reaches “marry me” status, but it’s pretty dang tasty.
