Me and my husband are trying our best to eat out less for lunches. Not only do we hope it will save us money, but we also hope it leads to better meals. If you read my prior post, you know that I started going to the gym. As part of that venture, me and my husband are also trying to add more protein to our diets.
This week, I saw a recipe for garlic butter steak bites on Instagram. I decided that I would make my own version using the original recipe for inspiration. Excuse the lack of good pictures. I forgot that I could make a blog documenting the new recipe and therefore took subpar pictures LOL.
EQUIPMENT
- Instant Pot
- Bullet Blender or Stick Blender
- Skillet
- Air Fryer
INGREDIENTS
- 2 lbs.of lean stew meat
- 2 lbs. of russet potatoes
- 1.5 ounces of grated Parmesan
- 5 ounces of beef bone broth
- 1 cup regular beef broth
- 1 12 ounce can of evaporated milk
- 2 tsp. minced garlic
- Salt
- Fresh Coarse Ground Pepper
- Smoked Paprika
- Garlic Powder
- Onion Powder
- Parsley Flakes
- Oregano
- Powdered chicken stock
- Red Pepper Flake
METHOD
- Cut stew meat into bite-sized pieces.
- Season with 1 tsp. salt, 1 tsp. pepper, 1 tsp. garlic powder, and 2 tsp. onion powder.
- Preheat instant pot on the saute setting.
- Once hot, sear the steak bites in small batches.
- Once all the steak bites have been seared, place back into the instant pot with 1 cup of regular beef broth.
- Set manually for 35 minutes.
- When done, quick release the steam.

- While the meat is cooking, peel the potatoes. Cube into bite-sized pieces.
- Preheat air fryer to 400 degrees F.
- Season potatoes with 1 tsp. oil (I use sunflower), 2 tsp. smoked paprika, 2 tsp. onion powder, 1 tsp. salt, 1 tsp. garlic powder, and 1 tsp. parley flakes. Toss until well covered.
- Once the air fryer is up to temperature, toss in the potatoes and cook for 25-30 minutes.

- While the meat and potatoes are cooking, make the sauce.
- In a bullet blender, blend the Parmesan, evaporated milk, and 1 tsp. or oregano.
- In a skillet, heat 5-6 ounces of beef bone broth.
- When the bone broth is starting to bubble, add the Parmesan/milk mixture, 1 tsp. smoked paprika, 2 tsp. of minced garlic, 1 tsp, of red pepper flake, and 2 tsp. powdered chicken stock.
- Heat until thickened. If the sauce doesn’t thicken, add 3 tsp. of cornstarch mixed with enough water to make a slurry. Pour in the slurry and continue to mix.
Once everything is done, mix together and you get this not-so-sexy looking meal:

THOUGHTS
My family thoroughly enjoyed this meal. Taking the time to cook the steak bites in the instant pot is worth the extra effort. The meat is flavorful and tender. In the original recipe, he pan-fried the steak bites, and I knew that only pan-frying would make the meat tough. Considering that the purpose of this meal is to reheat at work, I didn’t want tough steak.
This meal is not for the weak. It is VERY filling. You don’t need to eat a lot.
I don’t think I have any changes to this recipe. The family liked it as is. I MIGHT try to thicken the sauce a bit more.
